Sunday night already?

This weekend FLEW by!

My 'cross-training' activity for today was cleaning up the apartment. What a freaking workout. As I mentioned a few days ago, I feel like I haven't been able to catch up on anything, including cleaning. Boy did I made up for it this afternoon!

Since the bathtub was sparkly clean, I decided to finally use the Sakura Bath Bomb I got awhile back at Lush. A friend of mine is a hardcore Lush fan and last time I went with him, I decided to pick up 2 bath bombs - one for me and one for Jamie. Since Jamie's big on baths, he used his almost immediately. Mine has been sitting in the bathroom for, oh, I'd say about 5-6 months now?

So I used it...and decided I don't think I like baths. I just couldn't relax, nor did I understand the point of the bath bomb. I mean, it smelled awesome, but that was about it. Bummer. Maybe I'd like baths more if we had a ginormous soaking tub with jets. Yes. Yes, I think that's how I've always imagined a bath. :) Moving on...

I prepped my salad for the week after my bath - Cucumber and Tomato Salad with Avocado and a Soft-boiled Egg:
Well, this is only the tomato, shallot and cucumber part...I still have to do the eggs and avocado. This salad is inspired by a 'breakfast salad' I came across a few months ago on FoodGawker. To prep for the week, I chopped the bulk of the veggies up and I'm going to soft boil a couple eggs (figuring this will last 2 days) and maybe throw in some CORN hehe. The avocado and dressing (red wine vinegar and olive oil) will probably go in tomorrow morning so they don't get all yucky.

Jamie took charge of dinner tonight and I must say it was pretty successful! We had a Roasted Cornish Game Hen with Green Beans and Corn.
As usual, Jamie's plate is always best to photograph since he's a skin/dark meat eater.

Roasted Cornish Game Hen
1 1.5 - 2 lb cornish game hen
1/3 stick butter, softened
1 tbsp Italian seasoning
1 tsp salt
1 tsp garlic powder
1 tsp white vinegar

Preheat oven to 350 degrees. In a small bowl, combine butter, Italian seasoning, salt, garlic powder and vinegar and mash together (can also be done with a food processor). Rub butter mixture between skin and meat of the hen and on the outside. Roast for 1 hour.

Cornish game hens (or yard buzzards as Jamie likes to call them) are pretty easy to work with and I think they're a pretty good option if you don't feel like roasting a whole chicken. The one we made tonight was just 1.7 (or so) pounds and was just enough meat for the two of us.

Green Beans a la Jamie
Handful of green beans, trimmed
1 tbsp olive oil
1 tsp crushed red pepper
Sprinkle of garlic salt

Bring a medium pot of water, olive oil and crushed red pepper to a boil. Add green beans and cook for 3 minutes. Drain and toss with garlic salt.

I had no idea that Jamie was planning on getting frisky with the green beans! I came into the kitchen and saw this pot bubbling away with red flecks in it. Turns out he was adding some fun flavors to the water! I sprinkled some garlic salt in last minute b/c I thought they could use something salty.

Corny Corn
2 ears of corn
1 tsp chili powder
1/2 lime
olive oil

Boil a pot of water, cook corn for 5 minutes. Drain and sprinkle with chili powder, lime juice and olive oil.

So I love corn. It's probably one of my favorite things to eat EVER. I usually like it plain - none of this butter business. For some reason I decided it needed some random flavors tonight...bad idea. The chili powder and lime really needed to be turned into a chili-lime butter. On their own they added nothing. No matter, it was still corn and I was happy.

Speaking of corn, I know everyone that has seen me eat corn thinks I'm weird...I'd just like another opinion. Have any of you eaten an ear of corn and left this behind?
I know it's super weird - I eat my corn row by row. At least I don't get anything stuck in my teeth!

For dessert (yes, there's been a lot of dessert going on lately) I grabbed a couple single serving cups at the Giant:
Jamie got the Party Cake (duh) and I got the Wildberry Parfait.

The Party Cake looked and tasted exactly like the name...kinda reminded me of Carvel cake icing. Jamie was a fan:

Okey, off I go to play with my foam roller. This is going to be another hectic week with some not so exciting meals, but I'll still try to post! If I disappear for a bit, don't worry...I'll have plenty to write about this weekend while we're visiting the fam in NJ (and NOOO I'm not from where the Real Housewives are from ;p) and exploring NYC. I'll let you know later on this week what fun/nerdy things we have planned! Nites :)

Ha! That's exactly how I eat my corn, too!

P.S. I've tried running sans music as you've suggested. It was calming and allowed me to focus more on my breathing. Thanks!

Mia - hoooooraaay! I'm not the only one!! :) That's awesome on the running...glad you're liking it :)

roseyrebecca - Totally. We're planning on heading into the city all day Friday (7/3) checking out Chelsea Market and High Line Park. Still waiting to see if we're doing lunch w/my sister and tots, but will keep you posted!
