GAH! Where did the day go?!

Hello again! It's almost 9:30 and I'm JUST getting around to blogging. Today seems like the longest day ever! I didn't get around to finishing that long post I mentioned earlier so looks like it will have to wait until Sunday evening. Sorry!

In the meantime, I'll leave you with tonight's dinner so I can spend some much overdue QT w/Jamie. What a crazy week!

Since I have my friend's bachelorette party tomorrow night, I pushed my BSI entry to this evening. What
feta-licious creation did I make?? Orzo with Spinach and Feta.
1/2 lb orzo, cooked according to package
1 tbsp olive oil
1 clove garlic, minced
2 flat anchovy fillets, minced
5 large cremini mushrooms, diced
1 bag baby spinach, chopped
1/4 c grape tomatoes, chopped
1 14 oz can whole artichoke hearts, chopped
1/3 c reduced fat feta, crumbled
2 tbsp chopped walnuts, toasted

Heat olive oil in a skillet and saute garlic and anchovies for 2 minutes. Stir in mushrooms and cook until they begin to soften. Add spinach and cook until wilted. Add tomatoes and cook for 2 minutes.
Stir walnuts and artichokes and saute for 3 minutes.
Add orzo and feta, stir to combine. Serve immediately.
I've made this dish a few times before and this time I wanted to throw in some prosciutto or something, but forgot it at the store. Usually I use pine nuts, but apparently we don't have any so I subbed in some walnuts. Check out my other version here.

Reduced fat feta always has a spot in our fridge since it's great on salads, pasta, and tons more (can't wait to see the other entries)! I think I've gotten so used to the taste of it that I don't remember what full fat feta is supposed to taste like! Agh! What are your thoughts on Reduced Fat vs. Full Fat feta (flavor-wise)?

Kind of a random combination, but the orzo intruded since I wanted to get it in before Sunday ;)

Jamie had these cooking as I walked in the door and the apartment smelled delicious! He used some black pepper and my favorite bbq sauce - Sticky Fingers Carolina Classic.
This stuff is like crack. I could seriously dip ANYTHING in it. My favorite thing to dip - tater tots. MMM. It's mustardy, tangy, spicy and slightly sweet...perfect! We grabbed a bottle of this the last time Jamie made some Crockpot Pulled Pork BBQ and it was love at first taste! I highly recommend this stuff if you're a fan of mustardy/vinegary bbq sauces.

Ok, I told myself I'd only allow 30 minutes on the computer and my time is up. I'll try to get a post in tomorrow, but can't guarantee since I've got a 8-9 mile run, work and then bachelorette party! I'll definitely be back on Sunday though!! Hope everyone has a great Saturday :)

I've never tried reduced-fat feta before, but I have tried the fat-free kind and boy, is it nasty. I use the full-fat one now. Feta is one of those cheeses that a little goes a long way, so why not get the real good stuff? hee hee.

Oh and your orzo with feta looks SOOO good! the ingredient list is fantastic, with the artichokes, walnuts, and anchovies! wowww!

Yikes, if your long run is as early as my long run tomorrow (wake up at 5:15, meet running group at 6am) then we should both be asleep by now haha! Can't hear about your run, hope it goes great! :)

burp - I think I accidentally started buying reduced fat feta a long time ago and just kept buying it...so now it's what I think feta is supposed to taste like - so wrong! haha.
